Real licorice gets its distinct flavor from the extract of the licorice root. This extract contains a compound called glycyrrhizin, which is naturally sweet and has a complex, slightly bitter, and sometimes medicinal taste. Traditional black licorice candy is made with this extract, along with sugar, flour or gelatin, and sometimes other flavorings like anise oil or molasses. On the other hand, Red Licorice is called "licorice" mainly due to its similar shape and chewy texture to traditional black licorice. When red licorice was first introduced in the 1950s, it was made in the same rope or twist format as black licorice.
